Pool Boy
Apparently it is open. Co-worker tried the lasagna soup said it was decent. I looked at their website - they use no dairy, no butter, no oil and no salt. I might be convinced of the first three ingredients, but no salt? JSnake
Unless they mean no added salt, I don't think it's physically possible to make a dish that doesn't contain salt. Also curious what a lasagna soup entails.
DonRocks
Also curious what a lasagna soup entails. I envision a Minestrone with ground meat but no cheese, or Pasta e Fagioli, or something similar. This is a funny picture - "I'll have what they're having!" ktmoomau
Website: http://www.soupup.us/ The non-dairy cream soup looks good, I won't get a chance to get to Union Market anytime soon, but it looks good.

I guess these high end soup places are starting to 'ship' their soups that way.
Pool Boy
Never went, but coworkers have. Not really sure I was onboard with the idea of no salt or dairy or butter, which is why I never went yet, but....."Soup Up to Close in Bethesda" by Aaron Kraut on bethesdamagazine.com
rockcreek
I went about 6 weeks ago, and I actually liked the food. But the location was completely untenable. And it was huge. There was also a funky-shaped upstairs. There's a lot (to put it mildly) that I don't know about restauranting, but I couldn't imagine the math working out. Didn't know about the no-salt/dairy/butter, but now that you mention it ... .
