One of the best moves we ever made was saying hi to the big guy with a
cowboy hat at Taste of the Nation a few months back.  David Haegerdorn
has recently writen an article on lamb featuring Border Springs and
Craig Rogers.  He called Craig and told him that Border Springs & Dino
would be a perfect fit.  And they are.  On our menu, we offer Border
springs lamb shanks and lamb tongue, but there is no better way to offer
lamb than by buying a whole lamb.  So for tonight's dinner, we did just
that!  This way, we can offer an array of flavors, textures & cuts that
we cannot do on our regular menu.  This is a tasting menu of 10 very
small courses that will add up to quite the meal.

The fine print: You much reserve by calling the restaurant.  Please have
a credit card ready to guarantee your reservation.  Seating is communal
and on the second floor.  No substitutions can be accommmodated.
Vegetarians not welcome. If you think lamb are cute, wait till you see
how pretty they are when about to be eaten.  Free corkage is not
available for this special event.  Refunds only if your spot is filled
from a waiting list.
