Corned-Beef Hash

I often think back fondly of my trip through the wilds of Afghanistan where I lost my corkscrew. Having to subsist on nothing but food and water, I found a great little diner that served up an awesome corned beef hash. Anyone know the name of the joint? Have you found anything like it in these parts?

I think all the Tastee Diners serve corned beef hash. It's just canned Hormel (ou equivalent, as they say in the fine-print of rental-car advertisements in France, e.g., "Peugeot 305 (ou equivalent) 45€"), spatula'd on a flat-top, but it gets occasionally crispy if they burn it just right. smile.gif

I'd bet most of the genuine greasy-spoons (29 Diner, Linda's Cafe, Bob and Edith's) serve their own rendition; you might be able to find something similar made with kabob-meat at Georgetown Cafe.

It's just canned Hormel

I ASM'ed a show once where I had to plate up the canned stuff every performance for a character...the poor kid playing the role was really upset that he'd actually have to take a few bites of it (it tended to congeal), so I starting nuking it just before it had to go on.

Suffice it to say, I'm permanently traumatized. At least by the Hormel; maybe one day I'll work up the guts to try the homemade version without having flashbacks.

Royal on St. Asaph Street has a pretty good version on the Sunday breakfast buffet. Looks homemade, taste's homemade. Can't say for sure it really is, but it definitely fills the Corned Beef Hash urge and you can eat all you want (or about 2 tablespoons in my case).

Virginia Kitchen and Amphora in Herndon both have it on the menu, and neither version appears to be from a can - the chunks are different sizes, and there are carrots and things. My dad liked Virginia Kitchen's version, so that's a pretty good sign; count me among the traumatized.

Brooklyn's Deli in Potomac. Hands down, best I've ever had, including (name your deli) in NYC.

With a couple of over easy eggs on top, and the best rye toast for 100 miles, it's worth a drive across town.

Strong words. I must investigate. Oh damn.

I like corned beef hash.  In my book though the DGS pastrami hash knocks the stuffing out of any corned beef hash I've had.

Most times I'm at DGS for brunch with someone different I'll order the pastrami hash.  They try it.  They rave and want more.  I'm so reluctant to share it.  :D  Its occurred at least 5 times!!!!!

I'm far from an expert cook but enthusiasm and diligence have helped me develop some decent technique.

Corned beef hash falls into a very small category. It's something I almost never order out since I can make a very good version at home.

Now, great corned beef on the other hand? Totally different matter and what I mistakenly thought DanielK had raved about upthread. Guess this will save some driving in terms of Brooklyn's.

As I recall in the DC area, Dino's Grotto is by far my favorite.  But that DGS hash is on my list.  I love corned beef hash, but my complaint with most places around here is not crispy enough potatoes.  I am sure I have had the one at Green Pig Bistro and it sounds like something they would do well, but I can't remember.

I make my own corned beef hash.  It's very good.

First I make corned beef

Next I slice some potato, thinly

some yellow or sweet onion

Sweet has always been the crowd favorite

I use yellow

Now cook everything together

for a long time

put a lid on it

flip stuff over from time to time

cook

If you can flatten it into a pancake

it's ready

cool

cook Corned Beef Hash pancakes

until they are crispy

Once more into the breach with DGS pastrami hash.  This is by far my favorite and just crushes any corned beef hash I've had.  Autumn is upon us.  Hash is one of my favorite meals to cook.  Its good for a longish breakfast, lunch, brunch of course, dinner and of course left overs.  Great, in my mind with a lot of dicing, slicing, and spicing.  Open to many variations; salmon or other fish is excellent....they don't always need to be meats.  It doesn't always need eggs in my book.

I'll do pastrami hash this season.   If its half as good as that of DGS I'll be pleased
