Dandelion Greens

I remember seeing a poster of edible greens (at the Crisp and Juicy (Falls Church)), and this was the longest green on the whole poster. True?

(Taraxacumic trivia: dent de lion (in French) = "lion's tooth")

Hmm, is this a trick question?

I don't recall the poster in question, so if the question is poster-specific, can't answer, but dandelions themselves are probably not the longest edible green, at least I don't think so. Cardoons might be. Or maybe pea shoots?

If you're going to eat dandelion greens, you want to select the shorter, newer, greener leaves, as they are less bitter. Not quite time yet (for wild dandelion greens), but soon. Very soon.
