Rustico restaurant is hiring for an AM Sous Chef position at our Alexandria location. 5 days on, 2 days off. Consecutive days off are guaranteed. Average 50 hours per week.
Rustico is a vibrant, bustling, unpretentious restaurant with a bustling bar scene. The food is focused on rustic european influenced dishes with american ingredients. Don't even get me started on the beer program. One of the best in Virginia. If you want to learn about beer and work with meat fabrication, while being in an environment to expand your career, then this is the place.
-managing and training staff
-managing lunch service
-product ordering and cost control
-butchery and charcuterie preperation (including sausages, mortadella, salame cotto, corned beef, pancetta, and potential for whole animal fabrication with the right candidate) NOT JUST MEAT PORTIONING!
-YOU MUST WORK BRUNCH!
The right candidate would include someone who is passionate about teaching others, organized, and highly motivated. This is a busy restaurant and requires hard work and busy services. The plus side is the chance to work for a rapidly expanding restaurant group and be in an environment where you can learn almost everything there is to know about restaurant operation(food and labor cost, menu planning and development, scheduling and hr)
