But yours looks pretty awesome and like the work of someone who knows what he's doing. In a fairly non sequitur way, it reminds me of the fabulous almond/almond brittle gelato by Jonathan Copeland some friends and I enjoyed last night. To torch or not to torch? It was a pretty darn good cake, but the cake was a bit out of balance because we did not give the ganache enough time to become thick enough. When we assembled to layers, too much of the ganache leaked out of the sides. Still, as always, in cooking and baking you always seem to learn something, especially from your mistakes.
