Tonight, while taking a walk around the neighborhood my fiance and I acquired about three (maybe four?) pounds of jalapenos from a somewhat intoxicated man who claimed he had just picked them at some farm in VA yesterday. He was just giving them away because he didn't want them to go to waste. They look and smell excellent, but I'm not quite sure what to do with so many of them.
Can jalapenos be frozen? I'm thinking of making salsa, and maybe roasting or stuffing some, but that won't hardly put a dent in the pile I've got in the fridge. What would you do?

I chop them up and put them in freezer bags in the freezer. They keep very well, in my experience.
Use gloves or you will be sorry!

Roast them, then package in ziplocks.

Make verduras en escabeche (Mexican pickled vegetables) with the jalapeņos, onions, carrots, celery, garlic. You can probably find a recipe online. It's very simple to make and is a delicious snack.

Freeze some chopped, some seeded/chopped, some whole. In individual containers (or bags) so you don't have to thaw the whole mess to get a small amount in the future.
Related question: I bought a bunch of mixed hot peppers from the farmer's market on Saturday, so now I have jalapenos, habaneros, small red (Thai?) chiles, and a yellowish thing that's probably a Hungarian wax pepper. Any suggestions for applying the heat of one or all?

If you have a smoker... smoke 'em, dry 'em out and make chipotles.... Hmm.. I suddenly seem to be speaking like a cowboy. Yee-haw.

I suggest pureeing some of them and adding a bit of rice vinegar or white vinegar and using this as a condiment instead of tabasco. If it is too hot, a bit of sugar will help even it out.

Hot pepper jelly. I use a blend and then add a red and green pepper for color and sweetness
