Full Version: Pig Spleen
Just got back from the Dupont Farmer's market, where I was told that the USDA prohibits pig spleen from being sold. I've been buried in the Fergus Henderson book "The Whole Beast" and was looking forward to trying his recipe for rolled pig spleen. Anybody got any suggestions, or do I just have to wait til I can get over to St. John's? Could I buy a whole pig, organs intact, and get the spleen out myself? Is it even possible to buy an un-trimmed pig?
