I'm having a fence installed today, and one of the men working on it told me that the white flowers blooming on a large, unkillable plant in my yard are called "flor de izote" and are edible. A quick Google search tells me that he's right, this is a yucca variety and the national flower of El Salvador, and is often eaten there and in Guatemala. I see references to cooking it with eggs, or in tamales. But I can't find any recipes. Does anybody know anything about this flower and how I can use it?
