I seem to have missed this earthshaking development last fall. Better late than never.

Bless those geniuses at Neal's Yard Dairy - they've resurrected traditional raw-milk, animal rennet Stilton! Except that they're unable to call it Stilton, as the Protected Designation of Origin rules for Stilton came into being only recently, and managed to lock-in the post-1989 use of pasteurized milk and synthetic rennet, so the new cheese has been dubbed Stichelton.

Cowgirl in DC supposedly carries it...has anybody here managed to score some yet?
