  1. Thank you all for your comments. We are delighted to welcome the community to Field & Main. Monday capped our first week open and it was deeply gratifying on many levels to have many friends and acquaintances around tables filled with VA food and drink. Our building on Main Street was an eatery in the late 1800s and she pressed back into service with class. I am excited to see how this restaurant and its service to the community evolves.   3. Greetings DR enthusiasts. I am pleased to see that there is a thread for Field & Main. My wife and I are in the process of developing a community restaurant in Marshall, VA. Post Ashby Inn, we launched our event and consulting company FABLE Hospitality. In tandem, we began looking for a venue to open a restaurant of our own. Marshall came onto our radar and we began looking in town for a space. The building that was most recently occupied by the O'Bannon family went on the market and everything about it said restaurant. We purchased the building and came to find out that the original part of the structure was built in 1790, but in about 1830 a landowner and entrepreneur, John Flowerlee, purchased the small two room house and added a three story structure for the purpose of feeding and housing the public. So, it is our great pleasure to be restoring the building for its initial intended use! The restaurant will have about 75 seats and will serve farm to table fare cooked principally over hardwoods on a large hearth. There will be a small bar area as well. More details to come. Updates will be posted here, on Facebook, and on our website.
  4. Greetings all, Neal Wavra here (formerly of The Ashby Inn). It has been some time since I contributed to this forum and I am pleased to note that Riverstead will launch officially in June. I will join John and Karen this weekend in Chilhowie to begin work on the menu and beverage offerings. For my part I will be putting together two wine pairings options. One will focus exclusively on the wines of the old dominion and the other will feature wines from the old world. I am looking forward to the opportunity to hone in on how best to support and accentuate the delicate and subtle that is found in their cuisine. Some courses will be very pure in their simplicity and others will have a depth derived from flavor developed over time through fermentations and the like or through the use of umami amplifying qualities. This arena will be a foray into pairing and matching that draws less from classic norms and more from a modern vanguard of food and wine affinity. Much to look forward to! Neal Oh and re the juices they will be more the latter than just straight juices. Also RE Ben and Mary's I will mention it if only for the self serving benefit--I Iive 5 mins from there.
  5. Don and Friends, Star and I are very moved by your sentiments. We cannot thank you enough for the support. We are gratified beyond words to know that our efforts at The Ashby were so well received. The Ashby will forever be a special place for us. After four plus years of spending nearly every waking hour with The Ashby, we will be taking some time to tip the scales in the favor of family and some r & r. We have a couple of projects that we intend on devoting some time and attention to and will share them in due course. I remain committed and very interested in promoting the VA wine industry and will continue to seek a role in this arena. I will also be joining John Shields and Karen Urie for their monthly restaurant, Riverstead, located in Chilhowie, VA, which is set to debut in May. John, Karen and I worked together at Charlie Trotters years ago and I look forward to working with them again. We love this site and will keep you updated here.   6. The Ashby Inn & Restaurant seeks a qualified individual for a full time salaried position with benefits requiring full time availability for breakfast, lunch and dinner shifts. Candidate must possess: Knowledge of professional fine dining service standards Knowledge of wines, wine presentation and service Knowledge of spirits, cocktail preparation and bar service The desired candidate is competent, professional, well spoken, eloquent, articulate, organized, and calm. This individual should have a minimum of five years service experience in a fine dining operation. This position is responsible for dining room operations including: Directing service by carrying out the service plan created by the managing partner for that evenings service, including orchestrating the seating. Maintaining service standards Leading daily staff meeting Opening and closing shifts Preparing daily menus Updating and operating POS system Supervising staff, monitoring labor costs Coordinating with chef and Managing partner to ensure adequate supply of service-related items (linens, bar supplies, etc) Assisting with service from taking tables to running food, serving wine to making cocktails.
