Smoked Fish

Looking for quality and variety. Seeking a talented and dedicated local smokemaster. I live in Anne Arundel County, but will make the drive to stock up. I would do the smoking myself if it weren't for the persnicketies.

Tough search subject; I don't know of any local fish smokers other than Neopol Savory, in Baltimore's Belvedere Square market, and her #1 is still salmon. DR thread here. Would love to find a local whitefish and/or bluefish smoker.

Scott Weinstein at BlackSalt will smoke fish and seafood on occasion. I recently had some marinated smoked mussels that he made, that were delicious. If you give him a call, he might tell you about any plans he has for smoking, or even do some on special order.

There is a storefront at the corner of H Street and Benning Road (on Benning) that advertises "African Smoked Fish - Wholesale / Retail". Wish I could be of more assistance, but there was not a phone number on the store - at least that I noticed.

I hear ya! I've been to Neopol and admire some of their fare; it is plan B.

I've had results ranging from okay to really good the three times I've tried smoking fish at home. There's a lot of info out there on the web as to brines and rubs. I've only done salmon but bluefish sounds yummy and worth a try once it's no longer 15 degrees out.
