Coconut Milk

What do you all do when you have a decent amount of coconut milk leftover? I usually make rice pudding or some Thai-style curry dish. Last night I doped hot chocolate with it - that was tasty. Anyone have any ideas for something unusual? Thanks.
When I make oatmeal--not quick cook or instant-- I use coconut milk as part of the liquid.

This recipe requires buying rice flour, but I love sweet Chinese rice cake (nian gao) with coconut milk. I don't know how well this recipe works... http://glutenfreeincleveland.blogspot.com/...years-cake.html People also put in bean paste or sesame seed paste instead of dates. I prefer baking to steaming because you get a nice crust on it, which is my favorite part.

Haupia I've never made it myself, but my MIL would sometimes make it for the annual Hawaii State Society Luaus as well as other get-togethers. I don't have her recipe with me, but in lieu of that I've linked to a recipe from the Polynesian Cultural Center. Google it for several more recipes...I've found they do differ with quantity of ingredients.
