bookluvingbabe
BLToddler passed his baked egg food challenge today and we can now serve him limited quantities of foods with baked eggs in them. Like muffins! So I'm looking for muffin recipes--savory as well as sweet-- that I can try on him. Bonus points for ones that sneak a little extra veg in to him and ones that are high in protein are always good. There are so many recipes out there that I don't know where to begin--turn to the tried and true from the DR community seems like a good place! Thanks! DanCole42
Alton Brown did a phenomenal episode on tricking kids into eating their vegetables. I highly recommend watching it if you can find it online (maybe like if it drops off the back of a truck). Anyway, it included this recipe for Parsnip Muffins: http://www.foodnetwork.com/recipes/alton-brown/parsnip-muffins-recipe/index.html
Pat
Not vegetable, but these Wheat Germ Banana Muffins are delicious, especially warm. The wheat germ gives a little crunch against the sweetness of the banana.
lizzie
My family really likes a pumpkin muffin recipe, which I found in a book by Elizabeth Alston ("Muffins"). I am hesitant to reprint it here, but it did come up on at least one blog when I googled it. We generally do not include the almonds in the recipe and do not always include the chocolate chips. I know there are many other similar recipes out there.
Anna Phor
I make muffins by using the Joy of Cooking muffin recipe and putting whatever I feel like in as additions. Bacon chunks, corn kernels & cheese is a popular combo, especially for breakfast.

The muffins really do taste better after a day or two.
KMango
Back in my wheat-inhaling days, I used to get a lot of mileage out of this book. The banana nut, zucchini, carrot raisin, and blueberry were all favorites but I made just about everything with success.
luxe
Cooking Light has a recipe for Morning Glory Muffins that I used to make for my toddler...just leave out the pecans if he's still at an age when that's a concern. It has carrots, apples, pineapple, coconut, and apple butter. They freeze and reheat well too.
