mdt Posted October 27, 2009 Share Posted October 27, 2009 Just read this enjoyable book from a "hamthorpologist" that started with the search for the perfect ham that lead him to travel and research pigs and products in various countries. Some very interesting info on how diet and treatment affects the meat and fat in the animals. He also discusses how that translates to taste and 'good' fat. Anyone else read this?
