Heritage Animals

This week's Time Magazine has a pretty good article about small family farmers that have turned to raising heritage animals, or pigs, turkeys, lamb etc. that used to raised and eaten in the US, before mass commericalization started to selectively breed them to near extinction. As you can imagine this is a very chef, farmers market, food freak driven market.
