Yes, the authors' restaurants are mentioned in the beginning, but only to give the readers an idea of who is speaking. Having read the statement, I don't see anything too controversial within. Well, I slightly disagree with the Brillat-Savarin quote as I think we'll eventually find a star that has a planet with intelligent life on it, but I like the sentiment nonetheless.
