DameEdna
I'm thinking of doing a dinner in homage to the Titanic - it sank April 14/15, 1912. Not going to do the full 1st Class dinner, which would be eleven courses! The original wine list is cryptic, but I have this: Claret Château Rouzan Segla, first quality Château Camponac, Medoc Hock - Rhine wine Rudesheim, still Moselle Josephshofer, still Burgundy Volnay Also, numerous varieties of champagne (don't have the names). I don't have vintages. Interestingly, there is some indication that some of the vintages were from exactly one hundred years ago. Any suggestions for wines that would represent these names? Thanks. jparrott
ClaretChâteau Rouzan Segla, first quality This is Chateau Rauzan-Segla, AOC Margaux. MacArthurs has the 1996....for $89.99 Hock - Rhine wineRudesheim, still The most common producer from that village is Josef Leitz. His wines are pretty readily available. BurgundyVolnay A common AOC, readily available. I recommend the wines of Lafarge, if you don't mind a little tannin in your Burgundy. Again, MacArthurs is a good source, including a few back vintages. Another approach would be classic cocktails. Both the Sazerac and Manhattan, I believe, would've been invented by that time. And chances are the top class passengers drank plenty of Madeira as well.
Joe Riley
Would it be wrong to serve iceberg lettuce? I'll bet they went for Porto and perhaps Malmsey. Things like that. Oh, and Cognac. Perhaps for dessert, a certain candy with a distinctive hole in the middle? (Okay, I'll stop)

DonRocks
I'll bet Tom Sietsema might have some thoughts about this.
