I have gone numerous times to this restaurant, and my favorite thing on the menu there is the kitfo. I've tried the kitfo at Abay Market, which I know Don and Bourdain both like, and I actually like the kitfo at Sheba even more.
I spoke with the owner the other day about their kitfo and she tells me that the cook is Gurage (kitfo is Gurage cuisine) and that they make their niter kibbeh by hand. I love the way that their kitfo is spiced (and you can taste the hints of spices like cardamon) and comes out in a bowl.
