  1. We still had some smoked pork, so we made pizza. Used this version of Jamie Oliver's no-yeast dough and we like a thinner crust, so spread it on a pizza stone, topped with BBQ sauce, pork and Mexican blend cheese. You can taste that it's not a yeast dough, but it's not a bad different at all. Both my husband and I enjoyed it and the next time we want pizza and want to eat dinner in less than an hour, we'll use this recipe.
  2. Last night, I poached a chicken breast, and shredded it for chicken salad. Then I diced 1/4 of a small onion, about a 1/4 cup of fire roasted corn, diced ginger, some of yesterday's basil relish and mixed it with some mayo and the chicken. Let that sit overnight and had it as my breakfast sandwich this morning. Definitely a winner in my book.
  3. The smoker took too long on Tuesday night, so we had dinner for lunch on Tuesday. I smoked a small (3 lb) pork butt and then made corn bread w/ the pulled pork. We don't generally have Cholula sauce on hand, but we like Marie's and sriracha sauce, so I mixed those together for the hot sauce rub and for the corn bread drizzle. I think I may have over baked it by a couple of minutes but it still tasted delicious.
  4. Last night's dinner was sweet potato fried rice with crab. It was my first time making "rice" from sweet potatoes and I really liked how it turned out.
  5. Ham sandwich on toasted herb French bread. We had a small amount of Thai basil in the fridge, so I used this recipe as a basis, but made a half batch, swapping cashews for the peanuts and chives for the green onions. This made a very nice condiment to go on the sandwich.
  6. We were out of bread flour for a while, so we found some recipes that use only all purpose flour and work really well. My husband is the baker in our house. After he made these baguettes the first time, I bought him a baguette pan and had him make more. I was missing bagels and generally our tastes in this area diverge as I like mine savory and he prefers his sweet. But we can both agree on jalapeno cheddar bagels and he's made these a couple of times now as well. I can't find any pictures, but using the bread machine is beneath my husband, so using the device is relegated to me. Early on, I had a recipe that worked perfectly but then I ran out of bread flour. Since then, I've made this Tuscan Herb French Bread a couple of times and it's turned out very well, both in looks and taste.
  7. Last night was a carrot noodle stir fry. We swapped in baby bok choy for the spinach and tossed in a jalapeno as well.
  8. We decided to go to the local seafood shop for this week's takeout. We packed salads, biked over and picked up a pound of steamed shrimp to have a picnic lunch at a local park.
  9. Last night I made a Spanish tortilla for the first time. My husband visited Spain with his dad and brother last August. One night, he decided to order a tortilla and the below arrived at their table. They looked at it, got out their phones and were like, so that's what a Spanish tortilla is. He told me about it when he got home and said he liked it, so I've been curious to make it since then. I followed the NYT recipe and decided not to risk the flip, so I popped it in the oven to finish the cooking process. It's a very simple recipe but I very much enjoyed the taste. I served it tapas style. We had a bit of cured chorizo and salami in the fridge, along with some mozz balls and Thai basil. Made a bit of a vinaigrette for the mozz balls with the basil and dinner was served. Dinner afterwards was a bike ride to the newly reopened local frozen custard place for a waffle cup w/ the flavors of the day: caramel swirl & maple bacon.
  10. Last night was a veggie lo mein. Bell peppers, baby bok choy and carrots were the veggies, but that wasn't enough veggies, so I used daikon radish noodles. Still have lots of the mango habanero sauce, so I added that to the lo mein sauce instead of sugar and we had a bunch of Thai basil in the fridge so added some of that at the end. I should have added the noodles after I took it off the heat, but otherwise, very happy with how it turned out.
  11. We like the Trader Joe's herb pizza dough, so we will generally buy a few bags and toss them in the freezer. Occasionally, a bag will drift to the bottom of the freezer and get forgotten. We've found 2 of those so far this spring. Last night's dinner was pizza w/ a lightly freezer burned dough. Toppings were baby bella mushrooms and spicy Italian sausage, Mexican blend cheese and after it baked, I drizzled over top, a little of the honey habanero sauce that we still have lots of. Dessert was 2 frozen chocolate chip ice cream mochi balls.
  12. I actually realized afterward that most recipes include gin and I have none in the house. So that's next on the list to be purchased, at some point in the future.
  13. Picked up a bottle of elderflower liqueur over the weekend because I've been curious about it. Last night made a concoction with it, some grog, fresh mint, some frozen mixed berries and topped off w/ seltzer. I enjoyed it, my husband not so much, but he's not a mint fan so not surprised.
  14. Tonight was smoked wings. My husband had his with mango habanero sauce and I had mine plain. I also roasted asparagus with coconut oil spray, salt and pepper. Once roasted, I sprinkled it with Parmesan.
  15. Dinner tonight was chicken bulgogi with buttery corn over rice. I really enjoyed the flavors and am looking forward to the leftovers for lunch tomorrow.
  16. My husband had some spicy pickle juice in the fridge, so decided to make margaritas with it, including the red pepper that was hanging out in the juice. Did have a little kick but was surprisingly tasty.
  17. Last night was clean out the fridge fried rice. Some brown jasmine rice, Italian sausage, 1/2 an onion, some baby carrots, 1 bell pepper, garlic, ginger, 2 eggs scrambled w/ Sriracha, and a spicy soy sauce. Definitely a nice simple meal to end the weekend.
  18. We had some finely diced jerk chicken left from earlier this week, so I made up a waffle batter and added some of the chicken to it for a very uncomplicated chicken and waffles breakfast. I've got enough leftovers for at least the next 2 days so also a win.
  19. Still have a lot of jun kombucha in the fridge and my husband isn't a fan so I've not made any more batches since I've been teleworking. But he asked last night how it would taste in a mixed drink so I gave it a try. Salted passionfruit w/ honey jun kombucha, cherry juice, Kraken rum and seltzer water. He said it tasted better that way, so I think I've found a way to whittle down the kombucha stash.
  20. Last night was grapefruit juice w/ orange liqueur. My husband added mango habanero moonshine to his, but that is spicier than the ginger-infused ghost pepper vodka we have, so I went with the vodka. Both were topped with seltzer water.
  21. My brother, an Army vet, said to have a burger on him yesterday, so that's what we did. I was feeling lazy, so just did pre-packaged burgers on buns, but we did slice up potatoes for oven fries to go w/ the burgers. My husband had a frozen coconut fruit bar for dessert and I had chocolate chip mochi ice cream.
  22. We hit up a local Peruvian restaurant for lunch yesterday and had the leftovers today. I had Cau Cau and the last of the salad while my husband enjoyed the chicken and rice.
  23. Tonight was grilled steaks. I pulled them out of the freezer a couple days ago and after they came up to room temperature this evening, I seasoned with some Worcestershire sauce and Penzeys Northwoods Fire seasoning. We had a couple of parsnips in the fridge, so I made oven roasted parsnips. Those got olive oil with turmeric, cumin, paprika, cayenne and black pepper before going in the oven. Those roasted while the steaks cooked. Once those were done, it was a delicious meal.
  24. Tonight was more of a wild fruit punch. I had some plum wine in the fridge, along with some cherry juice and OJ. I had an 11 oz. can of lychee that I put in the blender along with the juices and wine. We also added some Grog from Old House Vineyards for some more citrus flavor. Added a couple of ice cubes just to chill it and blended it all up. Poured it into our glasses and topped it off with some seltzer as it was a little sweet. Once I did that, it was perfect.
  25. Tonight, I made the salmon recipe I didn't make last night. We had some extra bok choy in the fridge and this was a good way to use it up. The glaze was a little saltier than I'd like but the meal was very good.
