  1. There were 2 beautiful Le Creuset (lighter blue) Dutch ovens at the DCUSA Marshalls today 11/12/10. One was a 6 quart for $149 and the other a lower slung, wider pot for $169 (compare at $250 they say). I had the later in my cart but thought better of my budget and bought the 7 quart red Cuisinart enamaled Dutch for $69. There's also a 6 quart Battali for $39. There are also some other perfectly fine (but not yuppie) smaller ovens though not name brand available as well. Shop fast!
  2. I'm always a bit baffled by pears. They are very hard, then very soft. With me there's no inbetween Anyway, I would love to get general storage tips but also have a specific request. I would like to make this recipe for Salt Roasted Pears from Martha Stewart. It calls for cooking Bosc Pears in salt for 60-75 minutes. My gut tells me that I can use fairly firm peaches for this recipe. I would appreciate input.

  5. I picked up a 2 lb tri-tip (grass feed Jersey, actually quite marble-y) from Painted Hand last week and would like to know if people think a dry rub or marinade is the better way to go? After reading through thread it seems there's no serious consensus. Is cooking this on a gas grill preferable to searing and oven? I'm leaning towards BBQ4ME's prep since I still remember it fondly from the 06 picnic. The only problem is I'm pretty sure they don't have Lowry's Mesquite on Mt. Pleasant street.
  6. Jersey cow fat is ugly, deeply yellow, almost unappetizing. Don't let that stop you. The incredibly marbled t-bones that Waitman & I consumed last night reminded me of the delicious Wagyu tasting at Vidalia. This is not veal, it's full blown beef and damn it's good. I was dubious at first because I've never met a fully grass feed steak I really liked. I want a freezer full of this, the meat is intensely flavorful. I can't wait to try the tri-tip. We picked it up at Bloomingdale market yesterday. And talking to Sandy is always a joy. What a lovely person.
  7. The mini ciabatta rolls from Panorama (at Mt P. & 14th St. markets) subs in pretty well IMO.
  8. The Cuban sandwich at the Pensacola airport (available at the end of the jetway) may be the best airport carry away dish ever and it reheats well too.
  9. They are too cute I'm a little jealous of their father/daughter breakfast tradition. But not jealous enough to get out of bed before 6am Nice piece on the area.
  10. Rehoboth I had the same experience with the salt level in the paella, next time I should man-up and say something I suppose. The staff was lovely.
  11. I believe I'm experiencing this "syndrome" right now. I had a handful of pine nuts a few nights ago. Waitman thought it was all in my head until our daughter said she tasted it too . It is decidedly not pleasant. Strangley, the only food or beverage I can consume with experiencing a bitter/metallic taste at the back of my throat is Diet Coke. I hope it abates before I hit NYC at the end of next week.

  15. Peanut butter and strawberry jam on a well toasted English Muffin with a side of Nutella. I've got a very big smile on my face and a milk jones. ETA: I guess this belongs in baking if you consider toasting an English Muffin baking but I really meant for it to be in the what are you eating right now thread
  16. A hot dog is no more a sandwich then is a hamburger (though a HB does qualify technically speaking). They are each sui generis. I'm pretty Hegelian with regards to the matter of sandwiches I suppose.
  17. I don't care for open-faced "sandwiches" I'm also in total crank mode today. Lavash is better than tortillas but only just in my book. If it is rolled or wrapped I think it is not sandwiched. The oracle has spoken.
  18. A paste-y flour tortilla filled with stuff that should be on real bread. An empanada is not a sandwich nor is a pasty or a beef patty or a burrito or for that matter sushi, though all are filled food items which may be eaten without knife and fork.
  19. A wrap is disgusting a sandwich is a thing of beauty, especially if someone you love prepares if for you.
  20. Add less water initially, then use ice cubes made from the concentrate? Perhaps I'm confused, if you take a shot of the straight concentrate does that work for you? If not you might work the water amount around the initial infusion to get to an outcome that suits your needs.
  21. Waitman and I have regularly purchased oysters from Rappohannock Oysters and been very satisfied with the product and the customer service. We have also purchased scallops and sea urchin that have been equally satisfactory but I'm not sure of the source. I have purchased shrimp from Joe Patti's in Pensacola and stone crab claws from Joes in Miami Beach with fine results but find the cost to be a bit too high for my wallet without a big order. Frankly I could probably make this same comment about all the places noted but in those cases I was always ordering quantity so the delivery cost (totally just I think) didn't stick out as much.
