  1. This is my favorite bar in the world. Its a routine stop every time I'm in NYC. I've been quite lucky to have always managed to snag a seat at the bar too. Their selection of amaros is so deep. I tried a Mexican Fernet last time, really good.
  2. Proof, in my opinion always has killer sweetbreads.
  3. Just to clarify, the reason for the grey edges on the tuna is because the tuna is never cooked in a pan or with any heat. The tuna loin is marinated in coriander, lime juice and olive oil and the acid from the citrus is what does the searing/cooking, not leaving the edges browned like it would have been in a pan. adios
  4. I haven't lived in Omaha for about 10 years, but V-Mertz was always a solid restaurant and Zio's was great for pizza after hitting up Drastic Plastic (is that still around)?
  5. Our GM turned into a veg head way back in the day because of a bad chicken sandwich from Kings Dominion. He is back to eating meat now.
  6. Growing up in New Hampshire, I met the lobster roll at an early age and have tried my best to replicate the simplicity of them and at the same time forget what they taste like (I hate lobster). We only use fresh still moving lobsters (both right and left handed) and the mix is made up of the whole lobster. We make a tarragon aioli seasoned with a bit of sriracha sauce and lemon juice to complement the lobster. The only filler is some finely diced celery (the green kind with leaves). The rolls come from Uptown Bakery and we cut them down the middle, scoop out the inside and then cut the sides off for them to resemble a mini New England hot dog roll. People seem to like them.   9. I know the guide is bad and all, but I am glad that it let me know that I work at a southern restuarant (not) and that even though there is no (') in our name, the smart guy/gal who reviewed us thinks/thought there should be. (imagine a sarcastic tone of voice)
