  2. Having friends in town means a dinner party. Cocktails were in the condo down the hall, so I was only responsible for dinner. I had a gift of a pound of crawfish tails in the freezer, so I made crawfish étouffée. For a salad, I chilled grilled asparagus and served it with romesco sauce, diced tomatoes, and slivered almonds. Desert was provided by a friend, and was a very nice cheesecake.
  3. Chicken cacciatore over spaghetti. Once again, and attempt to use up things that are in the refrigerator and freezer. We’ve had a quiet hurricane season so far, but I don’t like to have a full freezer if there’s a risk of the power going out.
  4. Inspired by what was in my freezer, I used stock, some pieces of leftover sausage, and a leftover smoked pork chop as a basis for chicken gumbo. I will freeze some of it for enjoying when the weather is a bit cooler.
  5. Last night’s dinner began with Roasted vegetable gazpacho. I roasted tomatoes, onions, and garlic, and used roasted red pepper from a jar. Served with cheddar cheese shortbread I had made earlier in the week. Then we had Sausage, pepper, onion sandwiches on crusty rolls. We ended with a cherry Clafoutis. It was a weird mix of food items, but everything was tasty.
  6. Vindaloo paste mixed with plain yogurt made a nice coating for broiled tilapia. I baked it for a few minutes before putting it under the broiler, and the coating got nice and brown. But the fish was still flaky and moist. Served with steamed broccoli/cauliflower, and roasted potatoes.
  7. I made this zucchini spaghetti yesterday, and I loved it. It’s a super easy summer dish, and I can see adding this into the regular rotation. I had it with a cucumber and tomato salad tossed with the last of the leftover remoulade dressing. Thank you for sharing the recipe.
  8. I buy frozen deveined shrimp, and they defrost really quickly. So when it’s too hot to cook there are some things that require no cooking at all, like ceviche, gazpacho, guacamole, poke bowls (especially good if you have leftover rice), overnight oatmeal. And then there’s the things that can be done quickly on top of the stove, like lentils for lentil salad, pasta for pasta salads and cold noodle dishes. I make scrambled eggs in a Pyrex cup in the microwave.
  9. It’s too hot to cook here, and I’m not feeling much like having a big meal. Last night I made shrimp remoulade on a salad for dinner. Lots of big flavors, but no cooking.
  10. Tilapia, crusted with Dijon mustard and grated Parmesan, and broiled. Yellow squash casserole with shrimp (sautéed squash, shallot, celery, garlic until the squash was soft. Threw in peeled shrimp. Once the shrimp cooked, I added seasoned bread crumbs, Parmesan cheese and seasoning. Baked at 3:50, topped with more cheese.) Cucumber salad.
  11. Even though the weather is hot and steamy, there were things that needed to be used out of the refrigerator and the freezer, and the result was a big pot of chicken noodle and vegetable soup. Some I will freeze for myself, and some I will gift to the neighbors.
  12. Ribs on the grill (dry brined overnight, and then baked wrapped in foil in a 325° oven for an hour and 40 minutes and then chilled), basted with half homemade barbecue sauce, and half cheap stuff from the grocery store. Potato chips with French onion dip, potato salad, coleslaw, watermelon. It was a perfect pre-Fourth of July meal
  13. After traveling for a while, I was happy to make dinner for a Friend tonight. I made a salad of Romaine, spinach, dried cherries, and goat cheese with a berry vinaigrette. The main event was butterflied chicken breast pounded, covered with a mixture of canned artichokes, breadcrumbs, lemon juice, olive oil, and seasonings, and rolled (roulade, if I’m being fancy). A quick roux of flour and butter, with chicken stock, Dijon mustard, a little bit of heavy cream, Parmesan cheese, tarragon, salt, and pepper made a nice sauce. I also steamed some broccoli. When the roulade came out of the oven, I sliced them and then covered them with some sauce. I think this was a very successful meal
  14. Do you think that sauce would work as well for a cold pasta salad? Your post makes me think that one could use the sauce on a shorter pasta, and add some shrimp and perhaps some chopped vegetables, and it would be a really good pasta salad.
  15. I had a lot of errands yesterday and I wanted to make a batch of cookies for a friend is having surgery. So I got some chicken breasts and gently poached them while the cookies were baking. I diced up the chicken breast and made a curry chicken salad, which I served on a lightly dressed green salad. It’s the perfect kind of meal for a busy, hot day.
  16. My sister is coming to visit, and I have been looking for a use for smoked pork loin that I bought at the Brazilian grocery store. I chopped up the pork loin, and I chopped up leftover french fries from the freezer, and with green onions, cheese and seasonings it all became a very nice crustless quiche.
  17. Three Outstanding meals in Zürich. Haus zum Ruden, in the old town right on the river. The restaurant used to be one of the craft guild houses, and is therefore housed in an old building. Look for brick colored building with a painting of a fox on the side. Traditional German and Swiss specialties with a surprising refined touch. I had a risotto with local mushrooms and sausages that was as good as any risotto I’ve had in my life. Surprisingly good food for a touristy area. Restaurant Enje - situated in a more residential neighborhood, probably not more than 10 minutes by Uber from the old town tourist areas. The restaurants’s owner/manager is Italian, so the menu leans Italian influences. It has a large open in Grill, so the grilled items are spectacular. Ethereal asparagus soup. Zeughauskeller - this is perhaps the most fun dining experience of my entire German and Swiss adventure. The restaurant is located in an older building, just a few doors off of the Bahnhoffstrasse. Easily accessible by foot from any place along the river in the main area of old town. The interior looks like your quintessential mind’s eye picture of a bustling German/Alsatian restaurant. Lots of dark wood, heavy chairs, and tables, steins of beer, and waiters rushing around with plates of giant sized food. It’s a casual, loud, raucous place that doesn’t always take reservations, and you may end up sharing a table with someone else, which is part of the fun. This is all about many forms of meat and potatoes, in the best way. I had a Wienerschnitzel that was bigger than my head. My friend had the mixed sausages on skewers with rösti. For Zürich, this is considered moderately priced, and I would say it is a must go, if you just have one meal in Zürich and you don’t want to be fancy.
  18. As it turns out, our hotel was just two blocks from this restaurant and we had a wonderful time there last night! Fried camembert , Wiener schnitzel with white asparagus, and dry Riesling. Excellent, and exactly the atmosphere and experience we were craving. Thank you very much for the recommendation.
  19. Asian Beef stirfry with broccoli, carrots, celery, onion. I had a lot of cooked rice in the freezer, so since I just needed to microwave rice, this dinner came together really quickly.
  20. Another rainy day yesterday called for comfort food. I made a Mexican stew. I toasted three varieties of dried chilies, and then rehydrated them while I browned onions and garlic. The chiles, onions, and garlic went into a blender with some of the chile water and a can of tomatoes. I sautéed cut up chicken, covered it with the chili paste and added a quart of chicken stock. Seasonings were oregano, cumin, smoked paprika, and Tajin. It simmered for about an hour. When the chicken was super tender, I added cubed potatoes, carrots, and about a cup of frozen sweet corn kernels. I let it go for another hour, until all of the vegetables were tender, and the gravy was really thick. It’s very spicy, homey and filling, and it made an enormous amount!
  21. Yesterdays torrential rain (24 inches in some parts of the city) cancelled restaurant plans. And then my friend had a parental emergency that canceled the subsequent dinner plans. So I forged in the pantry, and brought out canned artichokes and seasoned bread crumbs. I had some tilapia in the fridge. I made a sort of dressing of smashed up artichokes, seasoned bread crumbs, grated Parmesan cheese, olive oil, lemon juice, garlic, and parsley. I topped the fish with that and baked till it was done. Served with steamed buttered broccoli.
  22. Tuna, crusted with salt, black pepper, and coriander, seared rare. Dipping sauce of ponzu, Sriracha, Sambal olek and agave. Served with roasted broccoli and tricolor peppers.
  23. Having no plans yesterday, and no one to please but myself, I made pasta with sausage and spinach. Well, it was going to be sausage and broccoli rabe. But the grocery store that is within walking distance did not have broccoli rabe, so I subbed spinach. There will be leftovers for lunch today.
  24. Fresh market had really beautiful tuna steaks on sale. I cut one into two pieces and coated the outside with cracked black pepper, salt, black sesame seeds, and cayenne. I quickly seared all sides on a cast-iron skillet while the broccoli was steaming. This is such an incredibly quick and nearly fancy dinner. I would’ve liked potatoes or rice as well, but I just did it bother.
  25. Deviled eggs, with capers, instead of my traditional pickle relish. Greek style salmon, with lemon juice, olive oil, garlic, dill and oregano. Served over sautéed spinach with Greek lemon potatoes. An apple and berry croustade from fresh market.
