Oyster varieties including Malepeque, Chincoteague, Rappahannock, Toby Island and Wellfleet will be prepared raw shucked, fried, pickled and grilled and the chefs will also serve BlackSalt’s famous oyster stew. Wines will include Taittinger Champagne, Craggy Range Sauvignon Blanc, Louis Jadot Chablis and Cakebread Sauvignon Blanc each paired with a variety of oyster.
Representatives will be on hand to speak about the different varieties of oysters, Tim Sughrue from Congressional Seafood Company, Daniel Grosse from Toby Island Oysters and BlackSalt Fishmonger MJ Gimbar. Wine representatives from Republic National Distributing Company, Kobrand and BlackSalt’s wine director, Joshua Pauley will discuss the wine pairings.
