Seanchai
As part of my CSA I have a pork subscription, getting 10 pounds of various cuts each month. This month I got in my stash 2 three poundish bone-in fresh ham roasts. Aside from, you know, roasting it, anybody have suggestions for fun ways to cook with this cut? My Google and cookbook searches aren't turning up too much variety aside from salt and pepper and throw it in the oven.
The Hersch
Jamie Oliver has a recipe here for a pot roast of pork loin with figs and marsala that could easily be adapted for a piece of fresh ham. You could leave out the figs (I would, but then I don't care much for figs).
Pat
What about ham with raisin sauce? I have a recipe for fresh ham and a raisin sauce with brandy, but I can't vouch for its quality.
chaofun
A fresh ham can be used in place for a shoulder (picnic and butt) for the most part, though there is slightly less fat in a ham. Roasting the whole thing is always a good idea, but if you are willing to cut the meat off the bone you will be able to find more recipes referring to pork butts or picnics.
