Divine One
Before I go traipsing around the region - anyone know where I can find it? Wegman's? Making a smoked duck and andouille gumbo - it is optional, how would it affect the taste to leave it out? My first gumbo, so not sure. Txs. Tweaked
The little grocery stand inside Eastern Market (the one in the middle with all the fresh pasta) usually has file powder.
Barbara
I have a bottle of Paul Prudhomme's Gumbo File (pure ground sassafras) that I bought either at the Safeway or the Harris Teeter. It was with all his other spices.
squidsdc
I'm fairly certain I saw it at my local Magruder's in Kemp Mill. I noticed it as I thought it an odd item to stock in such a small store.
MC Horoscope
Before I go traipsing around the region - anyone know where I can find it? Wegman's? Making a smoked duck and andouille gumbo - it is optional, how would it affect the taste to leave it out? My first gumbo, so not sure. Txs. I think your gumbo would be better without it, but that may be because I grew up not using it. You're going to have plenty of flavor without it. I don't usually see filé with a duck gumbo. If you do use it, just sprinkle a little bit in your bowl at the table. If you mix it in the pot and cook it, the gumbo will be too thick, in my opinion. Good luck with your gumbo!
