Sorry, I forgot the name of it, but couldn't get enough! I'm not sure it was my dish, but I used Saveur's Southern-style macaroni and cheese recipe. Having been a member of the béchamel school for many years, this recipe has become my go-to mac-n-cheese since it appeared in the Comfort Food issue. One recipe note: use 16 oz of pasta, instead of the 8 oz. called for in the recipe. After seeing the jalapeno cheese square recipe, I can safely say that the cheese squares are *WAY* cheesier by volume Link to comment Share on other sites More sharing options...
Barbara Posted November 12, 2011 Share Posted November 12, 2011 1 lb longhorn cheese (or mild cheddar) 1 sm can evap milk (3/4 cup) 1 sm can chopped green chilies 1 lb Monterey jack cheese with jalapeno pepper 5 eggs (beaten) Grate cheese into large bowl. Add remaining ingredients and pour into a 9 X 13 baking pan. Bake at 350 until golden brown, about 30 to 40 minutes. Cut into squares. Serve hot.
