Rieux
For some reason, I am addicted to the steamed veggie dumplings at Meiwah. They are the only thing there that I actually crave, and for me they are by far the best thing on the menu. I would love to try to make them at home, but I cannot, for the life of me, figure out what the filling is made of. Does anyone have any suggestions? I have been wondering if it is textured soy, tofu, mashed mushrooms, etc, but really have no idea. Thanks!
TheMatt
Most recipes I've seen have shiitake mushrooms and Chinese chives as the main "bulk" of the filling. That said, I know some veggie dumpling recipes I've seen also have cellophane noodles as an ingredient (but that might be more Korean?). I guess I might have to investigate Meiwah sometime! goodeats
Rieux - typically, when I make veggie dumplings, I use a vermicelli/scrambled eggs/spinach filling, with a little soy sauce to give it flavor. I can't add scallions anymore, since I get reflux from it these days.
