Banco
Yeah Chicago!!!! And one place has cleverly skirted the ban by offering foie gras as a complimentary item. (The city ordinance bans the SALE of foie gras.) What restaurant is this, and when is the next flight to Chicago?! Nice to see Bin 36 is on the right side of this stupid law. Great restaurant. Sthitch
I wonder how long it will take Hot Dougs to have the foie gras dog back on the menu.
Lydia R
Today's Wall Street Journal has the details of Raymond Sokolov's "foie waddle" through the post-ban renaissance in Chicago's restaurants: Repeal is turning into a spur to creativity for Chicago's many ambitious kitchens. New foie gras dishes are on the menu or in the works at a dozen top eateries, most unashamedly at Moto, the molecular gastronomic laboratory of chef Homaro Cantu. He told local media he intended to offer foie gras in the shape of a duck with a force-feeding tube coming out of its mouth. A spokesman for the restaurant said he could "neither confirm nor deny" such a concoction was in the works.
