The small catch, ranking them based on what he calls the "new barbecue traditionalists" ie: The Aaron Franklin School of BBQ. DCity Smokehouse and Fat Pete's take top honors. Ericandblueboy Posted May 22, 2015 Share Posted May 22, 2015 I regularly rotate btwn DCity and Hill Country. Hill Country's moist brisket is much more consistently good. DCity generally has great pork ribs. I did notice something, when the pitmaster is on premises, DCity is wonderful; however, when I go on Sundays, he's rarely there, resulting in very inconsistent brisket and sometimes bad pork ribs. Note: I only enjoy Texas style BBQ, i.e., I will gladly eat at Hill Country and DCity, it's just that DCity's inconsistency frustrates me. Link to comment Share on other sites More sharing options...
