I am going to use two of them to make a chicken curry. But I still will have about 6-8 of them. I could go get more tomatillos or some tomatoes and make salsa. Slice the serranos and steep them in a mix of white vinegar and fish sauce. Besides Thai food, I've used this condiment with Indian, Italian (pizza, spaghetti), and Mexican food.
