The September 3&10 annual food issue has several great articles: Calvin Trillin goes to Singapore for the express purpose of eating "street food" which the Singapore government has cautiously and conveniently organized into "hawker" malls, where they can be regulated and rendered safer, yet still delicious. John McPhee describes some of the circumstances under which he consumed foods on his "Exotic Foods Life List." And Jane Kramer provides a portrait of Claudia Roden, British-Egyptian-Sephardic Jewish author of numerous anthropo-historical cookbooks of Middle-Eastern, Mediterranean and Jewish foodlore.
