Went to Thip Khao (on Christmas Eve, with Jewish friends) -- very impressed. There's both a slightly-Americanized menu, with dishes like papaya salad (extremely spicy!), the aforementioned pork sausage (very tasty), laab, fish and noodle dishes, etc., and also a "Jungle" menu (srsly?) with offal such as beef tongue (fantastic!), intestine, fish heads, and something called "pork blood tofu".
Someone organize a DR outing to this place. I want to go with some chileheads who know what they're ordering...

A few suggestions...
You've got the Filter on 20th, North of DuPont Circle, but not the Filter on I St, between 19th and 20th, NW. The Foggy Bottom branch has no WiFi. I love their pourovers -- great light-roasted beans -- but I generally don't love their espresso, which I find sour. (Others with better palates may disagree!)
I'd put Qualia up near the top of local roasters. They also sell their beans at the Columbia Heights Farmer's Market on Saturday mornings. I rarely make it up to their shop, so I can't comment on their preparation.
The Blind Dog on Florida Ave is a pretty great little neighborhood coffeeshop off U St.
What's the coffeeshop just North of the Convention Center? Blanking...

Chiming in -- was there last night. Had six dishes (for two), with drinks, which was enough but not a lot of food. Definitely pricey with small portions.
Oh, and a prominent local critic was there -- expect to see a review soon.
