There are a lot of foods on my menus at Butterfield 9 that are open to interpretation, but the short-ribs are just plain good. They're fantastic, actually, and given the recent rumblings suggesting otherwise, I am setting out to prove 'em wrong. For one hour on Thursday, October 18th, I will be handing out short-ribs to anyone who will taste. The ribs are fall-apart, mama's recipe, comfort-food good and I hope to see you there. Here's the info:
What: From 6-7 on October 18th, Butterfield 9 will be handing out portions of my short ribs with truffle grits. Stop by and taste.
When: Thursday, October 18th from 6-7pm

Butterfield 9's name has always been somewhat of a mystery. The classic movie, the address - no one seems to know.
The restaurant was actually built in the old Garfinkle's dept. store space (the men's shirt and underwear dept. to be exact), and when Garfinkle's was built, phone systems still operated on an exchange system. Some of DC's exchange ports included Charlie 4 and Butterfield 9. To call into the Garfinkle's space, one had to dial the operator and request a transfer into Butterfield 9 - hence the name.
Garfinkle's was a DC hot spot back in the day - the restaurant tries to keep hints of that era around.

Hello all,
Now that it finally feels like Fall, I will be launching the Game Tasting Menu at B9. The menu will launch on November 1st (running through March 1st) and includes five course for $65. Here are the details:
B9 Game Tasting Menu
65 per person. 25 wine pairing
seared venison loin, persimmon, Madagascar vanilla
roasted rabbit, walnut, white fig compote
pan-seared squab, green chili grits, bison jerky sauce
braised elk, caramelized rutabaga, wilted brussels, ceylon cinnamon sauce
cheese course
I get the Elk from a great farm in North Dakota, and the product has been amazing this year.
