  1. The "Marie Rose" sauce is similar to a remoulade.

    I believe the "Marie Rose" is simply ketchup and mayo mixed together, if I'm not mistaken. I assume homemade for both. Stopped by this past weekend after dropping some knives off at La Cuisine to get sharpened. Will be stopping by again after pickign up the cutlery on Saturday so that I can try the curry sauce and the Kitty O'Shea. Damn good fish and chips.

  2. At least they will no longer be hamstrung by the MoCo liquor regime so growlers are a good possibility.

    Actually, I doubt growlers will be available since this will not be a brewpub. None of the beers will be brewed on site, so they can't sell growlers of beer to go per VA law. The DFH franchises are basically what are called "tied houses" in the UK: a place that only serves one brewery's beer. DFH does not own these places, but licenses their name and logo to the franchise owners in exchange for them serving their beer. They also have some say over decor and the type of food offered.

  3. For me, one of the joys of cooking beets is that I get to eat the greens, which I'm betting a lot of people just toss. I'll chuck in a few handfulls of spinach that I've maybe kept a bit too long for salad purposes, but would be fine wilted. Toss with some sauteed garlic and a splash of vinegar. Yum.

  4. I'm curious about this topic as I'd like to start making pasta myself. Sir Mix-A-Lot (my Kitchenaid mixer) is not just for bread alone! Add to this discussion any good books or online recipes that are good to consult.

  5. If you like hops as much as I do, then yes. :P This does seem to be the current fad, though. Anyone get over to RFD this week to try the wet hopped ales (the ultimate hoppy beers) on tap?

    Excessive hopping is so 2004. :D The new thing in beergeekery is wild fermentation (bleeding edge). Barrel aging in oak, bourbon, and wine barrels is also pretty huge (though that's more cutting edge). Both of these, I should add, are really nothing "new" per se, just resurrections of old school techniques and practices.

    I missed the actual event itself, but leftovers are currently being poured at RFD's. Russian River Harvest and Sierra Nevada Extra Special Pale ale were on tap, with Pizza Port's and SN Harvest up next in the queue. $7 a pint, but cheaper than airfare.

    I can understand the disdain for RFD, and share in some of it, but CFresh left out what I think is a most glaring problem: Where's the local pride? Even in you take a liberal view of what constitutes "regional," something like less than 15% of the total beers available are from this area (I'm generous and consider NY to VA be "regional"). The selection of taps that are local beers is less than stellar.

    Nit, now picked.

    I will say that RFD's and the Brick rock during tastings, but I eat elsewhere beforehand. Otherwise, I'll pop in for a pint or two ever so often because there is occasionally something different on tap.

    Left out of the "Thor leaving us" discussion is that he has plans to open up a Belgian-centric bar in Philly. Best o' luck to him. There's already some well established Belgian-themed beer bars up there, but Philly is thirsty so he should do well.

    Good luck to Greg, too: I look forward to having whatever crazy West Coast beers you can get yer mitts on.

    I just hope Thor's departure doesn't jeopardize the DuPont BP's plan to do a beer bar in the basement along the same lines as the Gtown experiment. They bought the store underneath them and that's what Thor told me a few months ago, well before he told me he was leaving.

    I just hope they are Metro-accessible (not necessary, though). I lived about 6 blocks away from the store in St. Paul and let me tell you walking into a Penzey's brick and mortar store is pure hedonistic bliss. Hardcore olfactory food porn. I was kind of surprised DC didn't win the contest, but with three states and multiple entries from each area we probably diluted our votes as Principia alludes.

    Nope. Here is the sentence, verbatim,

    "We are also fairly optimistic about a spot in Cleveland and two locations in the DC area, one in Virginia and the other in Maryland."

    It was the Gtown branch, but it was about 4 years ago. I worked in the neighborhood at the time and remember the incident. I think it was the same summer that the manhole covers were blown into the air by decaying insulation. Moby Dick's was easily the best place to grab food in the entire area. Cheap and delish, plus I loved watching the bread get made. Watching some huge, swarthy and sweaty dude nimbly slapping dough with an audible thump against the walls of the oven is pretty dang cool.

    I've been meaning to make it out to Rustico anyways, now I have an excuse! 'Bout time I check out one of NoVA's better beer bars.

    I assume this means logoed pint glasses will be given out, correct?

  11. Smuttynose Brewery's Head Brewer is going to be the special guest at a beer dinner October 10th at Tallula in Arlington. Rustico's co-sponsoring the event...

    I so wish I could go to this. Dang choir practice....

    Smuttynose is probably one of the most undersung breweries of the East Coast. Their IPA ranks among my favorites and their Big Bottle Series present some great beers at even greater prices. Seek out their Imperial Stout.
