  1. Last couple of times I bought ribs to use for korean BBQ from Lotte or Super H have been dissappointing. The quality or the amount of meat on the LA style (I think it is called flaken cut) was not that good. I've notices they also "hide" the really poor cuts on the bottom.

    I want to do korean BBQ this weekend. Where can I source the best ribs for korean BBQ?

    BTW, I've also been curious, which is the primal I would by for korean BBQ if I wanted to try to butcher myself?

    I think it's flanken or (as my Korean Mother-in-law calls it) California-style kalbi. I get mine from the Global foods in Woodbridge or Manassas. I've never had a problem with the quality and they stock it in quantity. If you have the freezer space it's much easier to marinate enough for a few meals then freeze the rest.

  2. I had some Eichhof Braugold in Fribourg, Switzerland last week that was outstanding. I think they are based in Lucerne. The local brewery is Cardinale and their offering was much less rounded and a bit thin in comparison but not bad. I'm hunting for the Braugold in N. Va and if anyone knows where to find it I'd appreciate the help.

  3. Anyone remember the "Bar-J", a Tex Mex joint out on Route 1 in Alexandria (used to be close to Ft. Belvoir--next to a feed store)? It was tiny and grubby and there were TX license plates on the wall, and the proprietors were (I think) actually FROM Texas... It moved to some sanitized location in the mid-90s and lost all its charm. Not sure if the 2nd place is still operational or not. Probably not. But I recall the food at the old, hole-in-the-wall location being really, really good (though I admit to being no Tex-Mex expert)

    The Bar-J's at the North end of Woodbridge is still open as my wife picked up a chili mac dry w/ beans and no cheese for me last week.
