White Truffles

We should have our first white truffles of the season on Friday. The price is quite high {we are paying $3200 a pound} and we will charge $40 to shave truffles over any dish, or $49 for white truffle risotto bianco.

While most of my truffle vendors are reporting poor quality whites, this particular vendor has truffles from Tuscany and let me smell them the other day. They are superb!
