I hate to say this, but I have had the best success with the baby backs that I Cryovac sealed from Costco. My wife and I did a taste off, where I smoked three racks of ribs, from the Farmer's Market, Whole Foods, and Costco. The Costco ribs won hands down. They had meatier, were tenderer, and packed more flavor. The Whole Foods were a very close second, but one rack cost as much as the three from Costco. The undisputed last place ribs were the organically grown ribs from the Arlington Market. These were tough, and had sparse amount of meat.

All of that being said, I prefer spare ribs over baby backs, as they have more flavor and a ton more meat. Added to that they are much cheaper.

Thanks for the suggestion. Don't be embarrassed; the baby backs I've liked most to date have been from the school fundraiser company, Market Day.

As for the spare ribs vs. baby backs debate, don't want to start nuthin'.....
