Man, I love these things. I dice them into large chunks, squeeze a lime onto it, and before I know it, I can't believe I ate the whole thing.

I'm wondering what else I could do with them. It seems like you could substitute it for avocado in guac. I might puree one and make some sort of cocktail out of it. Perhaps make some sort of relish/salsa for roasted pork.

Any bright ideas out there?
