Charcuterie/Sous Chef for Butcher Shop and Grill

Ray's The Steaks seeks an impassioned, professional, experienced, driven and motivated Sous Chef for a new, stand-alone Butcher Shop and Grill to open soon (December target, build-out completed). Duties include the development and creation of in-house charcuterie specialties, management of production and retail butchery, and full Sous Chef and managerial duties over grill operations--basic baking and pastry skills are necessary. Training will be provided for the right candidate in necessary butchery skills. Charcuterie specialties will be sold under successful candidate's name. Branding and managing partner opportunities possible for talented, proven individual in an expanding, independent and unorthodox organization.
