Waitman
So, the increasing number of places that serve "tacos authenticos" all seem to put two -- or three, at the very credible Mt. Pleasant Market taco stand -- tortillas under the meat & stuff. Not that it's a burning issue but I'm curious: are we meant to divide our lengua and cilantro between the multiple tortillas? Or, give their occasional fragility, are they meant to re-enforce one another?
DonRocks
Hmm ... I never once thought it was anything but the latter; now you have me wondering otherwise. Personally, I don't find them all that fragile and (once I start feeling full enough to feel the guilt) I sometimes discard the outer tortilla. Sometimes the stuffing overflows a bit, suggesting the wealth might be shared. At Mt. Pleasant, they grill the tortillas briefly so they're a little brittle, suggesting the re-enforcement strategy. Though they're overstuffed, suggesting divide and conquer approach.
