oldenhoo Posted June 21, 2011 Posted June 21, 2011 I'm not sure this is the right fourm but I want to have a pig roast at the house over the weekend of July 4. Does anyone have a recommendation for someone who can cook a whole pig Latin or Filipino style? That is to say on a rotisserie and not in a drum on a grate. I've cooked quite a few both ways but I am having a hard time sourcing the size pig I need up here. I am thinking it would be easier for me all around if someone else cooked it and brought it to the house instead. By the way, I am looking for about 100 lb dead weight pigs so suckling pigs at Eden Center wouldn't work. Thanks in advance for your help.
Choirgirl21 Posted June 22, 2011 Posted June 22, 2011 I can't help with the pre-cooked variety, but if you're still interested in sourcing your own pig, Springfield Farm in Sparks, MD may be able to accommodate you. Friends of mine have gotten both a whole pig for roasting and a side of a pig to breakdown and cook from them. Their current price list does list whole roasting pigs ranging from 30-200 lbs.
agm Posted June 22, 2011 Posted June 22, 2011 Try Springfield Butcher in - you guessed it - Springfield (http://www.springfieldbutcher.com/), or Let's Meat on the Avenue in Del Ray (http://www.letsmeatontheavenue.com/) I've ordered several pigs from both places, in sizes from 40lbs up to 67.5, dressed weight. Either can probably get you the size you want. Springfield generally wants a full week's notice, Let's Meat 4-5 days. If you want to do it on a rotisserie, you'll want someone to cook and deliver. If they cook on-site they'll be there overnight.
