Well, you've got about two more hours to get down there. Veal bratwurst, kielbasa, merguez, rabbit terrine, sopressata, calabrese, something like bresaola but made with beef heart, a smoky duck salami, and a few other charcuterie items were all being served in the tasting room, along with five wines. Jamie also gave us a sample of his prosciutto, which he said he's just getting into. I'm no prosciutto expert, and I can't give an informed comparison to the best stuff from Italy, but that was a damned tasty piece of meat.

Some of these items are regularly on sale at Red White and Bleu, some are not. They're still experimenting to see what will sell.

According to the latest Red White and Bleu email:

Join us for a cookout 4th of July!

Saturday from 1-5pm

Chef Jamie Stachowski

Grilling his handmade Merguez, Veal brats, Kielbasas. Also featured will be Country

Pate, Rabbit Terrine, Duck Salami Petito, and more!

And their wine tasting for the weekend - bubblies for the Fourth:

Non Vintage Casteller Traditional Method Cava, Catalonia, Spain

Casteller Cava is a clean and refreshing sparkling wine, with hints of lime and

other citrus fruit. Its finish is light and delicate. Made with 40% Macabeo, 40%

Parellada and 20% Xarel-lo.

Non Vintage Siema Vineyards Prosecco Vino Spumante Brut, Veneto, Italy

This is a classically fresh, juicy Prosecco featuring subtle aromas of flowers and

ripe fruit, with refreshing acidity that is well-integrated with flavors and

effervescence.

2005 Bailly-Lapierre Crmant de Bourgogne Chardonnay, Burgundy, France

This crmant maintains an elegant fine foam with a shimmering gold dress. Fresh,

aromatic and powerful in the mouth the Chardonnay grape seduces the taste buds.

Surprise yourself and your friends with an aperitif or marry this with oysters,

shellfish, crayfish or lobster.

Rumball SB17 Coonawarra Cuvee Sparkling Shiraz, South Australia

The Sparkling Shiraz is elegant with full fruit and strong Shiraz varietal

character. It has a soft, smooth palate and is a great wine to complement

fully-flavored foods. This wine from Coonawarra gives the palate a long fruit finish

with a roundness and depth to the mid- palate. Try this wine with game such as roast

duck, rack of lamb, buffalo or quail. Or as an alternative, with strong cheeses such

as Stilton, other Blues or Parmesan.
