Tweaked
This week's Time Magazine has a pretty good article about small family farmers that have turned to raising heritage animals, or pigs, turkeys, lamb etc. that used to raised and eaten in the US, before mass commericalization started to selectively breed them to near extinction. As you can imagine this is a very chef, farmers market, food freak driven market. Sthitch
For Thanksgiving I ordered a heritage bronze turkey from Townline in Pennsylvania. The turkey was unforgettably good, and will oder another this Thanksgiving.
FunnyJohn
I ordered a Kurobuta pork ham for Easter -- worth the price. Here's the pig Not really an heirloom animal, but a porker of a different type than what we usually find. Edited June 8, 2005 by FunnyJohn
