The tagliatelle looked very thin, almost like fresh pasta. When I got home, I realized the cooking time is only 4 minutes. I made pasta with fresh clams, and the pasta tasted excellent. They're based in Le Marche - I wonder if Fabio Trabocchi, who is from there, had anything to do with them being imported. Tagliatelle can range in width from 6.5mm to 10mm, but in terms of thickness, it must have been extremely thin to have a cooking time of just 4 minutes.
