naxos
There are lots of figs in markets now and I came across an old David Leibovitz recipe that looks great. "Fig Chutney" by David Leibovitz on davidleibovitz.com if I don’t go through the canning process and just cook the fruit with spices and sugars, how long can I keep it in the fridge? TrelayneNYC
Probably a week, maybe two. I'd be interested to know for sure since canning isn't one thing I'm familiar with and I'd like to branch out into that territory.

ktmoomau
Could you freeze it for a longer time- make it into smaller containers and freeze like freezer jam? Jam is generally pretty easy to can as you only have to hot water bath can it, but make sure you have enough acid, or add in the correct amount of Pectin.
