I've been buried in the Fergus Henderson book "The Whole Beast" and was looking forward to trying his recipe for rolled pig spleen. Anybody got any suggestions, or do I just have to wait til I can get over to St. John's? Could I buy a whole pig, organs intact, and get the spleen out myself?
