Demetrius
My wife and I were in Charleston, South Carolina last weekend for a cousin's wedding and had the opportunity to dine at a local bar called: Aw Shucks... I think it was initially the name that struck us, but we decided to take a chance and go inside for a quick bite to eat and a cold beer before heading back to our hotel and get ready for the wedding. I ordered a cup of seafood gumbo and a pint of their Charleston Ale and could not have been happier with my choice. Does anyone on the board have a great recipe for seafood gumbo that they would be willing to share? Thank you.
thistle
Well, this may not be much help-I've been to Charleston, eaten at Aw Shucks, but not the gumbo-there's a gumbo recipe I've wanted to try, but just haven't had the occasion, -Crab Gumbo, in the Frog Commissary Cookbook. I love seafood, in most way, shape, or form-except oysters, can't do that, yet. If you want, I'll email you the crab gumbo recipe...
Joe H
http://www.wchstv.com/gmarecipes/seafoodgumbo.shtml This is a bit of work but the result is outstanding. There was a time when Emeril's was the best restaurant in New Orleans. This is from that time.
Ilaine
http://www.wchstv.com/gmarecipes/seafoodgumbo.shtmlThis is a bit of work but the result is outstanding. There was a time when Emeril's was the best restaurant in New Orleans. This is from that time. Beer in gumbo? Dear God. Why? (No, I don't have a recipe for gumbo. No more than I have a recipe for making love. But here is a good place to start: http://www.gumbopages.com/ Drilling down to the actual recipes: http://www.gumbopages.com/food/soups/index.html Taggart is from New Orleans, not Massachusetts.) (My grandma always made her seafood stock from frozen gumbo crabs -- little bitty suckers, broken in half -- and dried shrimp, and the liquor from drained oysters. And magic.) Forgot to mention -- never use file powder and okra in the same gumbo. In fact, I don't actually know anybody who uses file powder at all, we all use okra. But somebody must use file, they still sell it.

I've not tried that gumbo recipe, but I've had huge success with every recipe I have made from the Frog/Commissary Cookbook. The Frog was one of my favorite restaurants in Philadelphia, long ago! I'll have to give that recipe a try.
