Barbara Posted August 28, 2014 Posted August 28, 2014 Dame Edna decided that he wanted me to grow a Thai pepper plant this year. I had to buy a 4-pack and now they are producing rather abundantly. It's obvious that I'm going to have to do some kind of preserving of all these peppers--which are HOT! Any ideas on what to do with them? I don't have a food dehydrator to dry them.

Any ideas on what to do with them? I don't have a food dehydrator to dry them. They are thin skinned. You can just leave them out in the sun and they will dry pretty fast. I have left them sitting out indoors and they dried. You could also just give them to me .
frogprince Posted August 28, 2014 Posted August 28, 2014 The easiest off the top of my head (in a home kitchen): pepper vinegar, hot sauce, pickled. All require very little labor, basic equipment and last indefinitely.
deangold Posted August 28, 2014 Posted August 28, 2014 Slice into rounds, cover with fish sauce or vinegar. They will keep forever this way, but they will eventually take on a sickly hue. You could drain them after a week or two and have very hot fish sauce or vinegar. You could simmer the rounds in a fresh tomato sauce till very soft and puree in the blender or food processor. Freeze in 1 tablespoon amounts using an ice tray. If it is a plastic ice tray, line each receptacle with plastic wrap or lean to like hot chile flavored martinis. And do not toucheyes or any mucous membranes after slicing the peppers.

Barbara Posted August 29, 2014 Author Posted August 29, 2014 Can they dry on the vine? Some of the ones which ripened first are looking a bit wrinkled. We use crushed pepped flakes by the boatload here and it would be nice if I didn't have to buy them for a year--or three.
lperry Posted August 29, 2014 Posted August 29, 2014 Can they dry on the vine? Yes. You can leave them standing and compete with the birds, or pull up the plants when the peppers are ripe and hang them upside down like hanging herbs to dry.
