Pita bread (you'll never want to buy grocery store pita again)

 

Good timing.  I was just thinking about trying to make my own pita bread.  I took a great class this weekend at CulinAerie that used a no-nead bread method I enjoyed, and we made boulles, baquettes, sticky buns and foccacio.  I liked the method, for a quicker bread, although I already make most of those breads already.  But it was a good method and it was based on a cookbook that I would like to read and see if there are tricks for more in depth flavors.  I was thinking about pita and how great homemade pita would be and making more complex breads.  I struggle to find cooking classes that are for my level of cooking that aren't parts of larger series courses.  Hubby got me two courses here and it has been a struggle to find the right class on a night I can make.  Pita is something that I have been thinking about.  Did you use a baking stone, or hot sheet pans?
